Yellow Curry Picnic Sandwich

Looking for a quick and healthy meal to satisfy those hunger pangs? Try our easy-peasy 10-minute sandwich recipe. Colorful and delicious, -filled with fresh greens, and a kick of our Mekhala Organic Yellow Curry Paste to tickle your tongue!




Ingredients for the Sandwich:

(Serves 1 pax)

2 slices of Gluten-Free Bread (or any other bread of your choice)

1 vegan Falafel patty or 3 Falafel meatballs (homemade or store-bought)

A handful of salad greens

1/3 of grated carrot

2 slices of juicy tomatoes

A half of an avocado - sliced

Salt & Pepper to taste


Ingredients for the Sauce:

(Serves ½ cup – 3 sandwiches)

2 teaspoons of Mekhala’s Organic Yellow Curry Paste

4 tablespoons of mayo (we prefer vegan mayo ;) )

1 tablespoon of maple syrup (to add a hint of sweetness)

A pinch of salt (for taste)


Method:

  1. Toast your bread slices so they can hold the sandwich filling.

  2. Prepare the sauce by mixing the 2 teaspoons of Mekhala’s Organic Yellow Curry Paste with the mayo, the maple syrup, and a pinch of salt.

  3. Spread a good spoonful of the curried mayo to each of the bread slices.

  4. Assemble your sandwich, get creative in the process!

  5. Enjoy!
