This fried rice is has both warm and bright flavors, pairing perfectly with the umami flavor of a wok fried egg. A simple and yummy main or side that is done in 15 minutes. Opt out of the egg for a vegan version and replace with diced mushrooms or tofu.
1/2 tsp cooking oil
7-8oz cooked rice
7-8oz frozen diced vegetable mix (carrots, peas, corn)
Salt to taste
Add 1 tsp oil to a pan and fry rice for about 1-2 minutes, breaking apart the clumps of rice.
Add in frozen vegetable mix and fry for another 3-4 minutes.
Add in Mekhala Organic Ginger Scallion Paste and salt to taste. Fry for another 3 minutes until the paste is fully combined with the rice.
Remove from heat and serve.
