Chicken Meatball Green Curry

Another healthy recipe that’s high in protein and requires few ingredients. This only take about 20 minutes to prep and cook! Adjust the amount of Green Curry Paste and coconut milk to your spice preference. Our Organic Green Curry Paste is well spicy and will definitely give this umami packed meatball recipe an awesome kick! Pair with some rice or potatoes!





Ingredients (Serves 2-3)

9 oz (250g) minced chicken

8-10 brown mushrooms, diced finely

1 white onion, diced finely

A pinch of salt

1 egg

1 cup coconut milk

3-4 tbsp Mekhala Organic Green Curry Paste


Method

  1. Combine minced chicken, salt, mushrooms, egg, and onion in a bowl.

  2. Roll about 2 tablespoons of the mixture into meatballs. (Feel free to make smaller or bigger meatballs if you wish)

  3. Bring a pot of water to a boil and boil meatballs for about 5 minutes. It may take longer or quicker depending on their size.

  4. Set aside meatballs when done.

  5. Mix Mekhala Organic Green Curry Paste and coconut milk in a pot and bring to a low boil.

  6. Add in meatballs and simmer for about 3-5 minutes.

  7. Take off heat and serve!
