Black Rice Sushi


Impress the pants off your dinner guests with this simple yet stunning twist on Japanese sushi!

Mekhala’s versatile *Organic Black Rice is perfect for this great canapé idea.

Ingredients

(Makes 15 to 20 pieces)

1 cup *Mekhala Organic Black Rice 1 1/4 cups water 1 1/2 tbsp rice vinegar 1 tbsp sugar Small pinch of salt

Method

1. Wash and drain the rice in a bowl then cook washed rice with the water in a rice cooker or saucepan with a lid. If using a saucepan, rice is cooked when water has been completely absorbed by the rice. Let cooked rice continue to steam for 5 minutes.

2. Mix rice vinegar, sugar and salt in a saucepan and heat on low until the sugar dissolves. Let the mixture cool.

3. In a large, non-metallic plate or bowl, sprinkle the vinegar mixture over the hot steamed rice and fold quickly, taking care not to smash the rice.

4. Wet clean hands with salted water to prevent rice from sticking when molding the sushi rice. Mold rice into small, elongated pieces and finish with your choice of topping.
