A low fat, coconut milk-free curry using Organic Red Curry Paste that's super high in protein! Perfect for a family night dinner, this asian-fusion tomato stew is perfectly spiced and super healthy. Inspired by @fitandwellmedgirl. Feel free to use any sort of beans, peas, or chickpeas!
1 can of tomatoes 1/2 can of kidney beans or chick peas, drained
6 brown mushrooms, sliced
1 cup broccoli, cut into florets
½ can water
1-2 tbsp Mekhala Organic Red Curry Paste
1. Mix curry paste, tinned tomatoes and water in a heavy based pot over medium-high heat and bring to a boil.
2. Add beans, mushrooms and broccoli, lower heat and simmer till cooked.
3. Serve with brown rice.
