Inspired by the classic Indonesian dish Gado Gado, this salad can be easily modified and made with whatever on the ingredients you have on hand. Just make sure that you keep the most pièce de résistance - the nutty, creamy peanut butter dressing, #MadewithMekhala's Mekhala Organic Shallot Kaffir Lime Dressing!
Make it veg*an-friendly by omitting the chicken (and substituting with more tempeh if you like)!
1 heaped Tbsp smooth peanut butter
1/3 bottle Mekhala Organic Shallot Kaffir Lime Dressing
2 cups baby spinach leaves
1/2 cup cooked broccoli
1/2 cup cooked corn kernels
6 pieces tempeh, pan-fried and drained
1 large chicken breast, pan-fried and sliced (optional - leave out for vegan/vegetarian)
1. Whisk peanut butter in Mekhala Organic Shallot Kaffir Lime Dressing until combined; loosen it with 1 Tbsp if necessary.
2. Arrange ingredients on serving plate, drizzle peanut butter dressing over ingredients, and serve!
