Chicken In Lettuce Cups


So quick to prepare as part of a meal, to entertain or for a low-carb snack! Use whichever sauce or paste you love to season the chicken!

Ingredients

(Serves 3-4)

2 chicken breasts, roasted or boiled and shredded

2 cups cooked corn

Lettuce leaves

Salt (optional)

2 Tblsp Mekhala Organic Yellow Curry or paste of choice OR Mekhala Organic Shallot and Kaffir Lime Vinaigrette

​Method

1. Fry corn and shredded chicken breast briefly in 2 tspn oil and Mekhala Organic Yellow Curry until warmed through and fragrant. OR toss chicken and corn in Mekhala Organic Shallot and Kaffir Lime Vinaigrette.

2. Serve atop lettuce cups.
