2 chicken breasts, roasted or boiled and shredded
2 cups cooked corn
2 Tblsp Mekhala Organic Yellow Curry or paste of choice OR Mekhala Organic Shallot and Kaffir Lime Vinaigrette
1. Fry corn and shredded chicken breast briefly in 2 tspn oil and Mekhala Organic Yellow Curry until warmed through and fragrant. OR toss chicken and corn in Mekhala Organic Shallot and Kaffir Lime Vinaigrette.
2. Serve atop lettuce cups.
