Tuna "Nicoise" With Coriander Ginger Dressing



A fragrant, quick breakfast idea or a lovely, protein rich side dish!

Ingredients

(Serves 2)

1x150gm tinned tuna thunks in olive oil

1 large potato, boiled and cut into 2 inch chunks

1 hard boiled egg, cut into quarters

100gm fine beans, boiled or steamed.

1 cup salad leaves

1/2 cup olives

1/2 cup cherry tomatoes, halved

1/2 cup sliced Japanese cucumber

1 cup Mekhala Organic Coriander Ginger Dressing/Sauce/Dip

​Method

1. Arrange salad leaves in a plate.

2. Layer the remaining ingredients and drizzle with Mekhala Organic Coriander Ginger Dressing/Sauce/Dip
