Tofu & Vegetable Curry (Sayur Lemak)

A favorite vegan Malay/Indonesian dish that is great as a main or side dish. Sayur Lemak is actually Malay/Indonesian for "Fat Vegetables"! The fat, however, all comes from the coconut milk which is an incredibly healthy source of fat as it contains antioxidants, anti-inflammatory properties. It's great for your heart, skin, and hair!
Ingredients
(Serves 3-4)
2 cups cabbage, cut into bite sized pieces
1 medium carrot, cut into 2 inch pieces
4 pieces tau kwa or firm tofu
1 cup string beans, cut into 2 inch pieces
13oz coconut milk
Salt (optional)
2 tbsp Mekhala Organic Yellow Curry
Method
1. Mix Mekhala Organic Yellow Curry in a pot over high heat with coconut milk till paste is fully incorporated.
2. Add other ingredients, bring to a boil and simmer over low-medium heat for 6-10 minutes until full cooked.
3. Season with salt if required.
