Another easy spring/summer lunch recipe idea! If you're vegan, substitute chicken with vegetable skewers!
8 chicken legs
1/2 jar Mekhala Organic Red Curry Paste (or any of our pastes you fancy!)
1 tblsp cooking oil (optional)
1. Marinade chicken legs in Mekhala Organic Red Curry Paste and oil for 2 hours.
2. Roast chicken legs in 200C/400F preheated oven for 20 minutes or on a BBQ.
3. Serve hot with lime wedges and scattered coriander.
