A fragrant, quick breakfast idea or a lovely, protein rich side dish!
4 large eggs, lightly beaten
1/2 tomato, chopped
1/2 red onion, chopped
2 spring onions, chopped
3-4 mushrooms, chopped
2 tblsp cooking oil
Salt and pepper to taste
1. Heat 1/2 tblsp oil in a large skillet over high heat. Fry onions for 1 minute, then fry mushroom and tomato and Mekhala Organic Coriander Ginger Sauce for another minute.
2. Season with salt and pepper if desired. Remove from skillet.
3. Add remaining oil and beaten eggs. Swirl around to egg cooks evenly. Scatter cooked ingredients evenly over the top of eggs and allow omelette to cook through.
4. Fold omelette over and slide onto a dish to serve.
