Quick, healthy, delicious and kid-friendly too!
2 cups rice, cooked
150gm/5oz broccoli florets
100gm/3.5oz frozen peas
2 tblsp cooking oil
1 tblsp water
Soy or fish sauce (optional)
Coriander leaves (optional)
1. Heat oil in a wok over high heat. Add 3 eggs, break eggs up and lightly scramble in wok. Push cooked egg to one side (or remove from wok if easier).
2. Add broccoli and peas, fry for 2min, then add rice, cooked eggs and Mekhala Organic Coriander Ginger Sauce. Keep frying for 1-2 minutes or until rice is warmed through.
3. Season with fish or soy sauce to taste.
4. Stir in coriander leaves and serve immediately.
