Poke Bowl: Salmon, Coriander Ginger Dressing and Quinoa Mixed Rice


Ingredients

(Serves 1)

100g Sashimi-grade salmon, diced

1 tbsp Mekhala Organic Coriander Ginger Dressing

Small handful of chopped spring onions

4-5 Cherry tomatoes, halved

1 inch section cucumber, sliced thinly

1-2 pieces lettuce leaves

1/2 to 3/4 cup Mekhala Organic Quinoa Mixed Rice

Method

1. Cook Mekhala Organic Quinoa Mixed Rice in a rice cooker then set aside.

2. Add Mekhala Organic Coriander Ginger Dressing and to the salmon and mix well.

3. Spoon rice into a bowl and top with salmon, cherry tomatoes, cucumber slices, lettuce leaves and chopped spring onions. Serve!
