Poke Bowl: Salmon & Tuna Marinated in Miso Lime and Sweet Chilli Relish atop Quinoa Mixed Rice


Ingredients

(Serves 1)

100g Sashimi-grade salmon & tuna, diced

1 tbsp Mekhala All Natural Miso Lime Dressing

3/4 tsp Mekhala Roasted Sweet Chilli Relish

Small handful of chopped spring onions

Handful of edamame beans, shelled

4-5 Cherry tomatoes, halved

1 inch section cucumber, sliced thinly

1 piece seaweed, cut into strips

1/2 to 3/4 cup Mekhala Organic Quinoa Mixed Rice

Method

1. Cook Mekhala Organic Quinoa Mixed Rice in a rice cooker then set aside.

2. In a small bowl, add Mekhala All Natural Miso Lime Dressing and Mekhala Roasted Sweet Chilli Relish and mix well. Add salmon & tuna and mix well.

3. Spoon rice into a bowl and top with the seasoned fish, edamame beans, cherry tomatoes, cucumber slices, seaweed strips and chopped spring onions. Serve!
