100g Sashimi-grade tuna, diced
Small handful of chopped spring onions
Handful of edamame beans, shelled
4-5 Cherry tomatoes, halved
1 inch section cucumber, sliced thinly
1 piece seaweed, cut into strips
1/2 to 3/4 cup Mekhala Organic Quinoa Mixed Rice
1. Cook Mekhala Organic Quinoa Mixed Rice in a rice cooker then set aside.
2. Add Mekhala Organic Roasted Sesame Garlic Dressing and half the amount of chopped spring onions to the tuna and mix well.
3. Spoon rice into a bowl and top with tuna, edamame beans, cherry tomatoes, cucumber slices, seaweed strips and remaining chopped spring onions. Serve!
