Mixed Veggie Pasta Salad with Miso Lime Dressing


Makes 2 serves

2 cups mixed roasted vegetables of your choice

(see: Roasted Mixed Vegetables with Thai Fragrant Seasoning)

150g fusilli or other short pasta (dry weight)

80g baby spinach or mixed salad leaves

4 tbsp Mekhala Miso Lime Dressing


1. Cook pasta according to packet instructions, then let cool slightly.

2. Toss everything together and serve!
