Roasted Mixed Vegetables with Thai Fragrant Seasoning

Add a dash of flavour to regular roasted vegetables with one of Mekhala's Organic Seasonings There is no hard and fast rule to this dish so just use whatever vegetables you've got on hand!


(Serves 2-4)

1 head of broccoli, cut into florets

1 zucchini, cut into half moons

200g cherry tomatoes, halved

2 carrots, chopped

200g mixed mushrooms, cut into halves or sliced (depending on type)

2 tbsp Mekhala Thai Fragrant Seasoning

4 tbsp Olive oil

1 tsp Mekhala Himalayan Pink Salt


1. Toss all the ingredients together in a large bowl, then transfer to a roasting tray, ensuring arranging the vegetables in one layer (use 2 trays if necessary).

2. Roast in a pre-heated oven at 220 degrees celsius until vegetables are cooked through and golden (about 45 minutes), stirring every 15 minutes ago.
