Pad Thai Noodle Salad

A "cold" salad version of the quintessential Thai dish - Pad Thai. All it takes is a few simple ingredients tossed in our Pad Thai Sauce and you're good to go!


(Serves 2-4)

150g Brown rice noodles or similar, cooked according to packet instructions

1 pc firm tofu, cut into 1cm cubes and pan-fried until golden

2 Handfuls bean sprouts, blanched

2 Eggs, cooked into an omelette and sliced into strips

1 Carrot, finely shredded

3 Stalks of chives, cut into 3cm pieces

Handful roasted peanuts

4 Tbsp Mekhala Pad Thai Sauce or to taste


1. Toss all the ingredients together and serve, with extra Mekhala Pad Thai Sauce drizzled on top if desired.
