MIXED ORGANIC RICE CHRISTMAS STUFFING
A scrumptiously healthy version of traditional Christmas stuffing that will have them carolling in the streets!
1. Cook rice in a cooker or pot, substituting vegetable stock for water.
2. Meanwhile, preheat oven to 190C. Heat a large frypan, melt butter then sweat onions for 5min.
3. Add garlic, bacon and celery and stir for another 5min. Throw in mushrooms and cook down. Mix in rosemary, cranberries and walnuts, and season with pepper.
4. Fold in cooked rice, spoon mixture into a greased ovenproof dish, dot with extr abutter (optional) and bake for 15min.
